Blueberry Crumble

This Blueberry Crumble is My Healthful Life's first ever dessert recipe! One of the great things about this delicious Blueberry Crumble is that you can have it as a dessert or as breakfast if you add it to some greek yogurt! The recipe is vegan and free of refined sugar, and it is even a great source of fiber! I love it because it is not overly sweet, but it still satisfies any of my sweet cravings. I hope you love it as much as I do!

Blueberry Crumble

Serves 6

Prep Time: 10 minutes

Cook Time: 40 minutes


Ingredients

2 cups blueberries

Crust:

1 1/2 cup quick cooking oats (I love the Bob's Red Mill brand

1/3 cup chopped pecans

1/4 cup almond flour

1/4 cup olive oil

1 tsp honey

1/4 tsp cinnamon


Directions:

  1. Preheat the oven to 350°F.

  2. Rinse and dry the blueberries, and place them in a lightly oiled pie dish. Using your hands, gently spread the berries to cover the bottom of the dish.

  3. Combine crust ingredients in a large bowl, and mix until moistened. Pour the mixture over the blueberries using a baking spatula to spread evenly.

  4. Bake for 40 minutes. Allow to cool slightly before serving.


*Note: The amount of ingredients you need may vary based on the size of your pie dish. When developing this recipe, I used a pie dish that was 9.5" in diameter and 2" deep. You may want to use more or less blueberries or crumble depending on the size of your dish.
