Kale, Pomegranate, and Almond Salad

If you know me, then you probably know that I LOVE kale! In fact some of my closest friends and family members call me "the kale enthusiast". This salad in particular is one of my all time favorites, and even the "kale-haters" of my family love it! The green dressing is to die for!

Kale, Pomegranate, and Almond Salad

Serves 4-6

Prep time: 30 minutes


Ingredients:


Dressing:

1/2 avocado

1/3 cup extra virgin olive oil

juice of 1 lemon

2 green onions, chopped

1 clove of garlic, chopped

2.5 Tbsp fresh basil, chopped

2 tsp tahini


Salad:

2 bunches of kale

1/4 cup pomegranate Seeds

1/4 cup roasted almonds, roughly chopped

salt and ground pepper

boiled or poached egg (optional)


Directions:

  1. Make the dressing by placing all the ingredients in a food processor and blending until smooth. After it's made, place it in the refrigerator for about 20 minutes to cool.

  2. Tear the kale away from the stem in bite-size pieces and place them in a large bowl. If you rinsed the kale, be sure to dry it, and then add about half of the dressing to the kale and use your hands to work the dressing into the kale until it softens.*

  3. Add the pomegranate seeds, chopped almonds, salt and pepper to taste, and a little more dressing before serving. Adding a boiled or poached egg is optional and a great way to add protein to the salad.


Note:


* Kale has a lot of fiber in it, so what a lot of people don't know is that you have to massage kale with some of the dressing on it in order to break down some of these fibers and soften the kale. This will make it much more palatable and easier to digest. Dressings that have healthy fats in them such as olive oil or avocado work best.
