Spinach, Grapefruit, and Avocado Salad

This has been my go-to lunch all summer! It is incredibly easy to make, super healthy, and absolutely delicious! Plus, if you don't like grapefruit, you can just switch it out with any other fruit of your choosing! Spinach is also an excellent source of iron if and only if paired with citrus, so this lemon dressing (plus the grapefruit) will help you work towards your iron for the day! The avocado and olive oil also provide healthy fats, and the apple cider vinegar helps boost your immune system!

Spinach, Grapefruit, and Avocado Salad

Serves 2

Time: 5 minutes (unless you are like me and are terrible at cutting grapefruit)


Ingredients:

Salad:

4 cups tightly packed spinach

1 ruby red grapefruit, cut into segments

1 avocado

Dressing:

1.5 Tbsp fresh lemon juice

1 tsp EVOO

1 tsp apple cider vinegar


Directions:

  1. Chop the spinach into bite-size pieces and mix with the grapefruit in a large bowl. 

  2. Combine the ingredients for the dressing together in a small bowl and stir them together. Pour the dressing over the spinach and grapefruit and toss so that the dressing is evenly dispersed.

  3. Slice the avocado into small cubes and add them to the salad. Serve with your choice of protein (my favorite is a simply grilled salmon!).


*Note: Grapefruit can be kind of challenging to cut, so I recommend watching a youtube video on how to do it if you are using fresh grapefruit. Remember that practice makes perfect!!
