Honey Crisp Apple, Pomegranate, and Arugula Salad with an Apple Cider Vinaigrette

This was one of the salads I created for D Home magazine when they asked me to create salad recipes featuring arugula for their Fall 2023 issue. Not long after that, it was also featured as a special for the week at the UT Southwestern Medical Center cafeteria.

I love this salad so much because it is full of flavor and contains so many quintessential fall ingredients!

Salad with Arugula, sliced Honey Crisp Apples, Pomegranate Seeds, Walnuts, and Feta Cheese

Serves: 4


For the salad:

4 cups tightly packed arugula

1 honey crisp apple, cored and thinly sliced

1/3 cup pomegranate seeds

1 cup chopped walnuts

¼ cup feta

Protein of your choice!

For the dressing:

¼ cup apple cider vinegar

3 Tbsp extra virgin olive oil

1 tsp Dijon mustard

¼ tsp honey

  1. Add the apple cider vinegar, olive oil, Dijon mustard, and honey to a small bowl and whisk until combined.

  2. Place the arugula, apple slices, pomegranate seeds, chopped walnuts, and feta in a bowl and drizzle on the dressing as desired. Mix before serving with a protein of your choice.
